Dining Out and Keto – Featuring Denny’s

#dennyswherever

Easy Keto Wherever

I think one of the most valuable lessons when learning to adopt a Keto lifestyle is understanding just how simple it is to eat this way in the many restaurants you find. Denny’s is a perfect example. It is not the kind of establishment that you would consider if you were looking for healthy meal options, and yet, with a few strategic choices, you can absolutely have a healthy, keto-friendly meal.

Breakfast on the Run Does Not Have to be Carb-Fueled

Case in point, while on my summer road trip through New England, I stopped here for breakfast. I had a cheese omelet, bacon, sausage, unsweetened tea, and black coffee. It was filling, delicious, relatively inexpensive, and perfectly acceptable for the keto diet.

As you can see, with relatively minor tweaks, keeping to a low carb, high fat keto diet is easy no matter where you are.

Caprese Stuffed Garlic Butter Portobellos! Garlic butter portobello mushrooms stuffed and grilled with fresh mozzarella cheese, grape tomato slices and drizzled with a rich balsamic glaze! Low carb, healthy and perfect to enjoy for lunch, dinner or as a filling snack!

Course: Appetizer
Cuisine: Italian
Servings: 5 – 6
Calories: 101 kcal
Author: Karina

Ingredients

Garlic butter
2 tablespoons butter
2 cloves garlic, crushed
1 tablespoon freshly chopped parsley

Mushrooms:
5-6 large Portobello Mushrooms, stem removed, washed and dried thoroughly with a paper towel
5-6 fresh mozzarella cheese balls, sliced thinly
1 cup grape (or cherry) tomatoes, sliced thinly
fresh basil, shredded to garnish

Balsamic Glaze: (or you can use store-bought or this recipe)
1/4 cup balsamic vinegar
2 teaspoons brown sugar (OPTIONAL)

Instructions

Preheat oven to grill/broil settings on high heat. Arrange oven shelf to the middle of your oven.
Combine all of the Garlic Butter ingredients together in a small saucepan (or microwave safe bowl), and melt until garlic is fragrant. Brush the bottoms of each mushroom and place them, buttered side down, on a baking tray.
Flip and brush any remaining garlic over the insides of each cap. Fill each mushroom with the mozzarella slices and tomatoes, and grill/broil until cheese has melted and golden in colour (about 8 minutes).

To serve, top with the basil, drizzle with the balsamic glaze and sprinkle with salt to taste.

For the Balsamic Glaze:
(If making from scratch, prepare while mushrooms are in the oven.) Combine sugar (if using) and vinegar in a small saucepan over high heat and bring to the boil. Reduce heat to low; allow to simmer for 5-8 minutes or until mixture has thickened and reduced to a glaze. (If not using sugar, allow to reduce for 12-15 minutes on low heat).

Recipe Notes
*To dry portobellos, make sure you use a dry sheet pot paper towel per mushroom, and lightly press sheet into each mushroom to gently squeeze out the excess liquid. If this step is not done thoroughly, the portobellos will release a lot of liquid during cook time.

**NUTRITION FACTS include the balsamic glaze.

Caprese Salad with Grilled Halloumi – Keto Recipe

I am always excited to learn about new foods from all over the world. Today, I stumbled across Halloumi cheese! This is a brined goat and sheep’s milk cheese and has a high melting point. It is also rather salty.

I am a huge cheese fan and am often scouring the cheese isles of Trader Joe’s, Earth Fare, Publix, and my local grocery store. I had never run across this particular cheese. You can imagine my excitement when I found it on Amazon!

A great recipe I found online is this Caprese Salad by Keto Daily. They actually grill the cheese first for flavor. Check it out!

KETO GRILLED HALLOUMI CAPRESE SALAD
Ease of Preparation: Easy

Prep Time: 5 Minutes

Cooking Time: 15 Minutes

Total Time: 20 Minutes

Ingredients:

7 Ounce Package of Halloumi Cheese
1 Medium Tomato
Fresh Basil Leaves
1 TBSP Unrefined Olive Oil
2 TBSP Balsamic Vinegar
1/2 Teaspoon Dried Oregano
Instructions:

  1. If your Haloumi does not come pre-sliced, then slice it into roughly 1-ounce slices.
Slice your tomato and discards the top and bottom slices.
  2. Warm up your charcoal grill and place Halloumi cheese directly onto the grates of the grill. Give them a little shimmy back and forth right when they touch the grill to help prevent them from sticking. Sometimes a little bit sticks to the grates of the grill anyway, but it’s not the end of the world.
  3. Carefully flip the Halloumi over after the first side if cooked to your liking. Be very careful when cooking the second side, as it cooks WAY faster than the first side from my experience. Keep your eye on it.
  4. When the Halloumi is cooked to your liking, bring it in and assemble your Caprese Salad.
  5. Alternate between Tomato slice, Cheese slice, and Basil until you have assembled your whole Caprese Salad.
  6. Top with a sprinkle of dried Oregano, Olive Oil drizzle, and Balsamic Vinegar.

Smoked Beef Ribs Recipe and Video | Hey Grill, Hey

I adore BBQ and eating it is one of the joys of following the keto way of life! When I run across these recipes from Hey Grill, Hey, I just have to share! With a little common sense and adapting, most recipes are ideal for keto. Just remember to be cautious about sugar. Enjoy!

Smoked Beef Plate Ribs

Prep Time 10 mins
Cook Time 8 hrs
Total Time 8 hrs 10 mins
Course: Main Dish
Cuisine: Barbecue

Servings: 4 people

Ingredients
  • 1 4-bone section beef chuck ribs about 4-5 pounds)
  • 2 Tablespoons Dijon mustard with horseradish
Simple Beef Rub
  • 2 Tablespoons coarse Kosher salt
  • 2 Tablespoons coarse black pepper
  • 2 Tablespoons garlic powder
Rib spritz
  • 1 cup white vinegar
  • 1/4 cup hot sauce
Instructions
  1. Preheat your smoker to 250 degrees F for indirect cooking. Set up the GrillEye to monitor your smoker temp and clip the probe onto your grill grates. Use a hardwood, like oak or hickory, to generate the best smoke for these ribs.
  2. Slather your ribs with the Dijon mustard. In a small bowl, combine the salt, pepper, and garlic powder. Season the ribs liberally, on all sides with the rub mixture. It’s OK if you don’t use it all, just make sure the entire surface area of the meat is covered.
  3. Place your ribs on the smoker and insert the GrillEye thermometer probe in the thickest part of the meat (without touching the bone). Program your thermometer alert to sound at 203 degrees F. Close the lid, and smoke the ribs for 3 hours.
  4. In a food safe spray bottle, shake together the vinegar and hot sauce. After the initial 3 hour smoke, begin spritzing your ribs every 45 minutes to an hour. Continue smoking the ribs until the GrillEye alerts you that the ribs have reached an internal temperature of 203 degrees F. This process typically takes between 8-10 hours, but every rack is a little different.
  5. Remove the ribs from the smoker, wrap in foil, butcher paper, or unwaxed parchment paper and let rest in an insulated cooler for at least an hour before slicing and serving.
